	Oranges called "Kiyomi" which are grown by Mr. Suzuki, a 70 years old man living in Yugawara from a beautiful orchard. It's very sweet and with a delicious taste, unlike other oranges from parts of Yugawara, which are sourer and have more seeds. Therefore, we need to do more research on how to use these oranges for desserts.

Vegetables

Name of ingredients Zucchini, Fresh potato, Yellow zucchini, Cresson, Broad beans, Japanese parsley, and Shallot, Cucumber Comments from the chef Summer vegetables are in season right now. This is the harvest time and we can enjoy a wide variety of seasonal vegetables such as cucumbers, yellow zucchinis, broad beans, and fresh potatoes.

seafood

Name of ingredients Local fishes of Sajima, Black (Dark-banded) rockfish, Japanese sea bass, Octopus, and Rack fish Comments from the chef Japanese sea bass caught in Sajimaﾕs fish port facing Sagami Bay is totally different from the fish from Tokyo Bay. It smells less fishy and the quality is better. Octopus from Sajima is very hard but very tasty and is the favorite part. Rack fish and Black Rockfish become available at the end of the season.

Others

Name of ingredients　 Artichoke from Mr. Miura Comments from the chef During the Meiji Era, Mr. Jiroheibei Muto started growing artichokes and currently the third owner has taken over and is producing them. In the photo, starting at the left there are three types of Artichokes. The green one is from the late owner, the purple one from Tuscany, Italy, and the last one also from Tuscany. We are the first restaurants to provide Artichokes from Tuscany.
