| Specialties of the Month for October
2003 |
 |
Name of Ingredients |
Komisu
(Pear) |
Comments from the Chef |
A
special fruit is a pear called Komisu, which is successfully
reproduced by Mr. Mishiro in Gunma prefecture. This is the
best pear in the world. |
 |
Name of Ingredients |
Mushrooms: Yanagi
Masutake mushrooms (Laetiporus), Maitake mushroom (Grifola
frondosa) |
Comments from the Chef |
These
mushrooms, which are natural and grown in the wild, were
inoculated last spring and embedded into the planter filled
with soil called Kanumatsuchi during autumn. Of course the
price becomes higher than typical mushrooms so I prefer
someone, who really appreciates eating them. For Yanagi
Matsutake, it might be the one of specialties of Kanagawa
prefecture in the future.

Name of
Ingredients |
Three
different types of sweet potatoes produced by Mr. Watanabe
from Oiso City |
Comments from the Chef |
They are
very delicious but at the same time this is very difficult to
cook because of the strong taste.

| Fish |
 |
Name of
Ingredients |
Tilefish
from Sajima fishport |
Comments from the Chef |
The
season of the tilefish is just around the corner. The only
weak point is the price since it is a relatively high-class
fish. The tilefish from Sajima fish port has the same value as
sea bream. However, it worth it to pay that high
amount. | |

Name of Ingredients |
Persimmon
|
Comments from the Chef |
The
persimmon is produced by Watanabe orchard in Oiso. There are
many types of persimmons existing in the market, but they are
not discussed here. I just want to inform you that the
persimmons this year are tastier than other years. Every
producer also says same thing, “Persimmon this year is very
favorable!” | |
