Name of Ingredients |
Komisu
(Pear) |
Comments from the Chef |
From
this month, the best season of Komisu just begins. This is my
recommended fruit of the month. |
 |
Name of Ingredients |
Sudachi citrus,
Yuzu citrus, Kabosu citrus fruits |
Comments from the Chef |
Yajima
farm in Totsuka produces these citrus fruits. They are called
kabosu, Yuzu and Sudachi (from Right to Left). All in the
citrus family, Sudachi smell like an orange. Since there are
only slight differences between Yuzu and Kabosu, even I cannot
recognize the differences if I eat them with my eyes closed.

Comments from the Chef |
These
are from Miura peninsula and this is only part of the
vegetables grown there. The season of the radishes, which is
the trademark of Miura peninsula, is just beginning. The
radish introduced here is the most popular one.

Those vegetables are also produced by Yajima farm
in Totsuka. The length of the Daikon radish is so big it
does not fit with the picture. That’s because of the
quality of the soil. The land is good for growing
vegetables with soft soil, which contains volcanic ash.
I was really surprised at the weight of cabbage. It is
very heavy and filled with leaves. I found many holes on
the leaves of the mustard spinach, but I figured this
was the proof that they are organic
vegetables. | |

Fresh rice

This is also from Yajima farm in Totsuka. This
year there have been many disturbances to rice growing
because of the cold weather in summer time. Some of the
better rice was sold with other low quality rice but
given a high-class brand name or mixed with non-fresh
rice. I contact directly with the producers and we have
the proof that this rice is an organic product. After I
checked the rice, I decided to cook risotto with it.
