Most of the ingredients we use come from Kanagawa prefecture where our restaurant is located, specifically from the Miura Peninsula. The nearby location is perfect as it allows for my to check the quality of the ingredients and deliver them to our restaurant keeping everything fresh. This region provides a wonderful selection of vegetables as well as is the seaport offers a treasury of seafood. Another special feature of this area is the specific manner in which the vegetables are grown. All the vegetables are organic and the farmers take great care in growing these vegetables that are specific to the Miura region and not sold at other markets. I never have to ask, “What kind of vegetable I want to have.”
